Поросенок с кашей

Тушку подготовить: опалить, поскоблить, вымыть дочиста в проточной воде, посолить. Выложить, подогнув ноги, на противень, смазать сметаной и поставить в духовку на несильный огонь. Когда подрумянится – подлить немного воды; на уши, чтобы не подгорели, надеть "шапочки" из яичной скорлупы. Жарить до готовности, поливая время от времени вытопившимся соком. Подавать поросенка целиком на большом блюде с гарниром из рассыпчатой каши, заправленной маслом и жиром, соком поросенка, смешанной с шинкованными крутыми яйцами. Когда будете разделывать на порции, разрежьте сначала вдоль пополам, а потом поперек порционными кусками.
